A lesser known spirit

Pechuga is mezcal that has been re-distilled with a combination of fruits, grains, and nuts. As part of the re-distillation process, raw chicken or turkey breast is hung over the still. As the alcohol vapors move up the still, the raw meat imparts a distinctive flavor into the final spirit.

The exact origins of Pechuga are somewhat unclear. The practice comes from very rural parts of Mexico and much of what we know about the spirit has only been passed down by oral traditions.

If you’re looking to try Pechuga, don’t expect it to be cheap. There are currently only a handful of brands in the US, and many start at $100 and go up from there.
